Nonni's Summer Burritos

Fresh herbs, warm spices, and crisp cucumbers give these easy burritos a delightful twist. Simple enough for busy weeknights yet unique enough to become a family favorite, they're a delicious way to enjoy the fresh flavors of summer.

Ingredients

  • 2 tablespoons cooking oil
  • 1 pound ground beef
  • 1 medium tomato, chopped
  • ½ teaspoon cinnamon
  • 1 teaspoon onion salt
  • 1 teaspoon garlic salt
  • 3 tablespoons dried ground mint
  • 8 large flour tortillas
  • 1 cucumber, scrubbed or peeled and diced
  • Fresh mint sprigs for toppings or garnish

Directions

  • Heat the cooking oil in a large skillet over medium heat.
  • Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain any excess grease.
  • Stir in the chopped tomato, cinnamon, onion salt, garlic salt, and ground mint. Cook for 3–5 minutes, until the tomatoes soften and the flavors blend.
  • Warm the tortillas according to the package directions.
  • To serve, spoon the seasoned beef mixture into tortillas, add fresh cucumbers mint sprigs, and cheese and other toppings as desired.  Roll securely.

Optional additions for serving:

  • Shredded lettuce
  • Crumbled feta cheese or cheese of choice
  • Plain Greek yogurt or sour cream
  • Fresh Mint sprigs for garnish
  • A squeeze of fresh lemon or lime juice

Nonni's Tips

  • Fresh mint can be substituted for dried mint. Use about ¼ cup finely chopped fresh mint. Save sprigs for the topping.
  • Leftover filling is delicious tucked into pita bread or served over rice the next day.

Little Helpers

Children can help wash the cucumber, help measure the spices, stir the seasonings into the meat (with an adult nearby), and sprinkle the diced cucumber over each taco before serving.
