Ingredients

- 1 pound ground beef

- 8 large flour tortillas
- 1 cucumber, scrubbed or peeled and diced
- Fresh Mint sprigs for toppings
Optional additions for serving:
- Shredded lettuce
- Crumbled feta cheese or cheese of choice
- Plain Greek yogurt or sour cream
- A squeeze of fresh lemon or lime juice
Directions
- Heat the cooking oil in a large skillet over medium heat.
- Add the ground beef and cook until browned, breaking it into crumbles as it cooks. Drain any excess grease.
- Stir in the chopped tomato, cinnamon, onion salt, garlic salt, and ground mint. Cook for 3–5 minutes, until the tomatoes soften and the flavors blend.
- Warm the tortillas according to the package directions.
- To serve, spoon the seasoned beef mixture into tortillas, add fresh cucumbers mint sprigs, and cheese and other toppings as desired. Roll securely.
Nonni's Tips
- Fresh mint can be substituted for dried mint. Use about ¼ cup finely chopped fresh mint. Save sprigs for the topping.
- Leftover filling is delicious tucked into pita bread or served over rice the next day.

Children can help wash the cucumber, help measure the spices, stir the seasonings into the meat (with an adult nearby), and sprinkle the diced cucumber over each taco before serving.
