Why I Love This Recipe
One of the biggest challenges I hear from parents is getting their kids to eat more vegetables. Putting anything in a tortilla shell can make a world of difference! Here are some great ideas.
Ingredients
- Any vegetables, cooked.
- Any vegetables raw, finely chopped.
- Leftovers of any kind.
Optional topping for serving:
- Shredded lettuce or cabbage.
- Crumbled feta or shredded cheese.
- Mix mayo and ketchup together.
- Any dressing your kids like.
- Any kind of dipping sauce.
Directions
- Heat a skillet over medium heat.
- Place a flour tortilla on the skillet, and heat for a minute or two, then flip and heat the other side. (Try not to overcook or it will get hard.)
- Fill the tortilla with whatever your preferred filling is, and allow your kids to add their own toppings.
- OR, if you need to "hide" what's in the tortilla, just prepare it the way you like and roll it into a burrito.

Children can help wash and cut the vegetables or mix the dressings, or choose their favorite toppings.

If you grow tomatoes, peppers, onions, spinach, or other vegetables, try adding some to your burrito. Picking vegetables from the garden and using them in a meal is a wonderful way to teach kids how delicious fresh foods taste!
